Mashed Sweet Potatoes
~Great recipe whether you're going to use it with your turkey on Thanksgiving or with your roast beef on for Sunday dinner.  Sweet potatoes are good for you and YUMMY!
4 tablespoons butter, cut into 4 pieces
2 tablespoons cream
1/2 teaspoon salt
1 teaspoon sugar
2 pounds sweet potatoes, peeled, quartered lengthwise, and cut crosswise into 1/4 inch slices
pinch ground black pepper

Combine butter, cream, salt, sugar, and sweet potatoes in 3-4 quart saucepan; cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork, 35 - 45 minutes. Remove from heat, mash potatoes and stir in pepper.

* I am a butter lover and used more butter than the recipe calls for. you could also use half and half instead of cream if you want to reduce the amount of fat and calories (I was tempted to do that, but opted for flavor over health).
